A truffle is a rich, creamy chocolate candy made with chocolate, butter, cream and flavorings, formed into small rough balls and coated with cocoa powder or melted chocolate.

Chocolate Truffles

1 (12-ounce) bag semi-sweet chocolate chips
1 (6-ounce) bag semi-sweet chocolate chips
2 ½ cups sweet butter, at room temperature
1 cup heavy cream

Directions:

1. Melt semi-sweet chocolate in top of double boiler over simmering water. Do not overheat.

2. Remove chocolate from heat and set aside to cool.

3. In the bowl of an electric mixer, whip butter until soft.

4. Add slightly cooled chocolate to butter. Whip until fully incorporated. Scrape sides of bowl and whip again.

5. While the mixer is still running, add heavy cream in a thin stream and mix until well blended. Chill until firm enough to shape.

6. Using a small scoop, form truffles by rolling into balls about 1-inch in diameter.

7. Roll each truffle in one of the following to coat: cocoa powder, crushed pistachios, coconut, finely chopped pecans or walnuts, or instant coffee powder.
