Cranberry Nut Bread

1 cup Parkay margarine
1 ¼ cups sugar
2 eggs
3 cups flour
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon soda
¾ cup water
a cup orange juice
1 ½ cups cranberries, coarsely chopped
½ cup chopped nuts
1 tablespoon grated orange rind

Directions:

  1. Cream margarine and sugar until light and fluffy.
  2. Add eggs, one at a time, mixing well after each addition.
  3. Add combined dry ingredients alternately with water and orange juice, mixing well after each addition.
  4. Fold in cranberries, nuts and orange rind.
  5. Pour into greased and floured 9 x 5-inch loaf pan.
  6. Bake at 350 degrees, 1 hour and 15 minutes. Cool in pan 5 minutes then remove from pan.
