Snickerdoodles

½ cup margarine or butter
1 ½ cups all-purpose flour
1 cup sugar
1 egg
½ teaspoon vanilla
¼ teaspoon baking soda
¼ teaspoon cream of tartar

2 tablespoons sugar
1 teaspoon ground cinnamon

Directions:

1. In a large mixing bowl beat margarine or butter with an electric mixer on medium speed about 30 seconds or till softened.

2. Add about half of the flour to the margarine. Then add the 1 cup sugar, egg, vanilla, baking soda, and cream of tartar. Beat till thoroughly combined, scraping side of bowl occasionally.

3. Beat or stir in the remaining flour. Cover and chill dough for 1 hour.

4. In a shallow dish combine the 2 tablespoons sugar and 1 teaspoon cinnamon.

5. Shape dough into 1-inch balls. Roll in sugar-cinnamon mixture to coat.

6. Place 2 inches apart on an ungreased cookie sheet.

7. Bake in a 375 degree oven about 10 minutes or until done. Cool on cookie sheet for 1 minute.

8. Cool on wire rack.

Yield: 36 cookies
