
Sweet Chex
This sweet snack makes a tasty gift that will be
appreciated by anyone who receives it. I often have my students prepare it
and deliver gift-sized portions in holiday gift bags to faculty and staff.
18 cups Rice Chex® cereal
4 cups pecan halves
2 cups packed brown sugar
2 sticks margarine
2 sticks butter
Directions:
- Combine Rice Chex® and pecans in a very large
bowl. Set aside.
- Combine margarine and butter in heavy saucepan and
melt over medium heat. Stir
frequently to prevent browning.
- Add brown sugar to melted butter and margarine and stirring
constantly, bring to a boil. Immediately remove mixture from
heat.
- Pour over cereal and pecan mixture, tossing to coat.
- Spread mixture evenly in 2 (10 x 15-inch) baking pans.
- Bake at 325 for 8 minutes.
- Stir mixture to coat again.
- Bake another 8 minutes.
- Remove from oven and stir to coat a final time.
- Let stand until cool.
- Place cooled Sweet Chex® into small zippered
bags or other decorative containers. Seal.
Yield: 12 (½ cup) servings
