Sweet Chex

This sweet snack makes a tasty gift that will be appreciated by anyone who receives it. I often have my students prepare it and deliver gift-sized portions in holiday gift bags to faculty and staff.

18 cups Rice Chex® cereal
4 cups pecan halves
2 cups packed brown sugar
2 sticks margarine
2 sticks butter

Directions:

  1. Combine Rice Chex® and pecans in a very large bowl. Set aside.
  2. Combine margarine and butter in heavy saucepan and melt over medium heat. Stir frequently to prevent browning.
  3. Add brown sugar to melted butter and margarine and stirring constantly, bring to a boil. Immediately remove mixture from heat.
  4. Pour over cereal and pecan mixture, tossing to coat.
  5. Spread mixture evenly in 2 (10 x 15-inch) baking pans.
  6. Bake at 325 for 8 minutes.
  7. Stir mixture to coat again.
  8. Bake another 8 minutes.
  9. Remove from oven and stir to coat a final time.
  10. Let stand until cool.
  11. Place cooled Sweet Chex® into small zippered bags or other decorative containers. Seal.

Yield: 12 (½ cup) servings
