Tomato-Mushroom Bow Tie Pasta

8 ounces uncooked bow tie pasta
½ pound fresh mushrooms, sliced
½ cup sliced green onions
2 garlic cloves, minced
1 tablespoon butter or margarine
1 tablespoon olive oil
2 (14 ½ ounce) cans diced tomatoes, drained
1 tablespoon dried basil
2 tablespoons minced fresh parsley
½ teaspoon salt
½ teaspoon pepper
¼ cup shredded Parmesan cheese

Directions:

1. Cook pasta according to package directions.

2. Meanwhile, in a large nonstick skillet, saute the mushrooms, onion and garlic in butter and oil for 5 minutes or until tender.

3. Add tomatoes; cook, uncovered, over medium heat for 10 minutes or until tender, stirring occasionally.

4. Stir in the basil, parsley, salt and pepper; cook 2 to 3 minutes longer.

5. Drain pasta; top with tomato mixture and Parmesan cheese.

Yield: 4 servings
